Yep, that’s right—lengua is tongue! “Lengua de vaca” or beef tongue is something we’re proud to serve at Amonos Mexican Kitchen, and in case you’re on the fence about trying it, we’d like to give you a few reasons!

The tongue actually used to be one of the most prized parts of the animal. Back in the days of Paleolithic hunters, the pieces with the highest fat content were the most desirable, and the tongue is about 75% fat—making it incredibly rich, supple, and marbled.

If you’re afraid of biting into something you think might be able to taste you back, don’t fret—during the preparation of the tongue, the skin is removed, taking all those sandpaper taste buds along with it.
